Chef Dave Query got his start in the restaurant industry at the age of 15 working at a hotdog stand. He would go on to graduate from the CIA in 1985. by 1988, at the age of 25, he was a restaurant owner. In 1994 Chef Dave founded the Big Red F Restaurant Group. 22 years later Big Red F is operating a total of 12 restaurants which consist of 6 unique concepts.

Chef Dave opened a restaurant during the middle of a divorce. If you don’t have your head in the game and if you’re not in it to win it you’re going to fail. It takes constant effort and focuses on being successful.

- Be honest with people. Especially if someone is not right for your team, let them know. You’re not doing them any favors by keeping them and you’re not doing your team any favors either.

- Hiring for personality. Look for intelligent, outgoing, and good people.

- Labor pool being tapped.
- Work ethic isn’t what it use to be, but you’re not going to change it. You need to adopt to the new times.
