Since we last checked in with the team at Melbourne restaurant Lume, Executive Chef Shaun Quade and Business Manager Veronica Fil have continued to ignore all rules and formalities and charged ahead with their passion: to create unique, other-worldly dining experiences for their guests. In 2017 Quade was named Gault & Millau’s Australian Chef of the Year and became infamous as the Chef who made contestants cry with his 150-step Pearl on MasterChefs Ocean Floor cooking challenge. Meanwhile, Fil launched her own hospitality marketing agency, Mr Harry’s Marketing Department — and is intent on teaching restaurant owners how to take control, quit being at the mercy of online ‘influencers’ and fake reviews, and use the resources they already have at their fingertips to grow their brand. Earlier this year the pair announced their plans to open their second restaurant in Los Angeles.
